Cheese straws are an all-time favourite party food with most people. Forget dainty and delicate canapés that don't even touch the sides upon eating them; most people won't be able to resist these crispy, crumbly and cheesy sticks of thinly cut puff pastry.

The best cheese straws are made with a strong, hard cheese and are full of flavour. A really mature Cheddar would be the most obvious choice but you can also flavour them with Emmenthal, Parmesan, Red Leicester or any other strong, hard cheese to your taste.

To bring out the flavour of the cheese a spice such as cayenne pepper or paprika is often added, which also gives the straws that extra heated kick. You can also try mustard powder, chilli powder or simply just salt and black pepper if you prefer.

If making your own puff pastry it is easier to incorporate the cheese without it falling out all over the place, however, if using ready-made pastry, which many would prefer, you may have to roll it out, sprinkle it with cheese, fold it up, roll it out again and repeat this several times in order to evenly incorporate the cheese into the pastry.

There are many varied recipes for cheese straws, as this appetiser can be easily adapted to suit different people's tastes. Below we have included a number of recipes that we think you will enjoy.

Cheesy pastry straws

Ingredients
  • 115g (4oz) of plain flour
  • 55g (2oz) of butter
  • 55g (2oz) of grated Cheddar cheese
  • pinch of mustard powder
  • pinch of salt
  • beaten egg to glaze
Method
  1. Preheat the oven to 200°C (400°F).
  2. In a bowl rub the flour, mustard powder, salt and butter together with your fingertips until the mixture resembles breadcrumbs.
  3. Add the cheese and mix together.
  4. Add a little cold water and combine until the mixture develops into a smooth dough.
  5. Roll out the pastry into a rectangle shape as thinly as possible onto a lightly floured surface.
  6. Glaze the pastry with the beaten egg.
  7. Cut the pastry into strips 2 inches long and ¼ inch wide.
  8. Arrange onto a greased baking tray and bake in the oven for approximately 10-12 minutes or until golden brown.
  9. Cool on a wire rack before serving.

Parmesan cheese straws

Ingredients
  • 450g (1lb) of plain flour
  • 150g (5oz) of butter
  • 150g (5oz) of lard
  • 150g (5oz) of grated Parmesan cheese
  • ½ tsp of mustard powder
  • pinch of freshly grated nutmeg
  • beaten egg to glaze
Method
  1. Cut the butter and lard into small pieces and place into a bowl.
  2. Add the flour and rub together until a fine breadcrumb mixture forms.
  3. Add 115g (4oz) of the cheese together with the mustard powder and the nutmeg. Mix together.
  4. Add 3-4 tbsp of ice-cold water and bring all the ingredients together to form a smooth dough.
  5. Wrap in clingfilm and refrigerate for 30 minutes.
  6. Preheat the oven to 200°C (400°F).
  7. Roll the pastry out to as thinly as possible.
  8. Brush with the beaten egg.
  9. Sprinkle with the remaining Parmesan.
  10. Cut into strips 2 inches long and ¼ inch wide.
  11. Arrange onto a greased baking tray and bake in the centre of the oven for 12-15 minutes or until golden brown.
  12. Remove from the oven and allow to cool on a wire rack before serving.

Quick cheese straws recipe

Ingredients
  • 450g (1lb) of ready-made puff pastry
  • 85g (3oz) of Emmenthal or Parmesan cheese
  • 1 tsp of sweet paprika
  • pinch of cayenne pepper
  • beaten egg to glaze

Method
  1. Roll out the pastry to an oblong 10in x 5in.
  2. Grease a baking tray and lay the pastry on top of it.
  3. Place in the fridge for 20 minutes.
  4. Preheat the oven to 200°C (400°F).
  5. Brush the pastry with the beaten egg.
  6. Sprinkle the cheese over the top.
  7. Mix the spices and dust over the top of the pastry.
  8. Cut the pastry in half lengthways and then cut straws down each half making approximately 24 straws.
  9. Take each straw and twist several times to make a spiral.
  10. Place onto the greased baking tray and bake in the oven for 6-8 minutes or until golden brown.
  11. Remove from the oven and cool on a wire rack.
