Bacon and apple salad recipe

Ingredients

  • 8 slices of crispy grilled streaky bacon
  • 225g (6oz) of French beans, trimmed at both ends
  • 4 large handfuls of salad leaves
  • 2 red or green eating apples
  • ¾ of a celeriac
  • 55g (2oz) of blanched hazelnuts
  • 1 tbsp of olive oil
  • Juice of ½ a lemon
  • For the dressing

  • 4 tbsp of hazelnut oil
  • 1 tbsp of cider vinegar
  • 1 tsp of Dijon mustard

  1. Prepare the dressing by whisking the ingredients together and then set to one side to allow the flavours to infuse.
  2. Steam or boil the French beans for a few minutes so that they still have a crunch to them. Drain and allow to cool.
  3. Peel, core and cut the apples into thin slices and place into the lemon juice.
  4. Peel the celeriac and cut into thin matchsticks. Add to the apples.
  5. In a large salad bowl place the salad leaves, beans, apples and celeriac.
  6. Add ¾ of the dressing and toss well so that all the leaves are covered with the dressing.
  7. Arrange the salad onto plates.
  8. Cut the bacon into small pieces and scatter over the salad.
  9. Place a dry frying pan over a medium heat and add the hazelnuts. Lightly toast until they are a golden brown colour.
  10. Remove from the heat, place into a plastic bag and crush with a rolling pin or something similar.
  11. Sprinkle the nuts over the salad.
  12. Drizzle the remainder of the dressing over the salad and serve.
