Bacon and wilted spinach salad

This salad for four people is fairly simple and quick to prepare. Spinach with bacon seems to be a very popular and interesting combination and the ingredients work well together. Together with the hard-boiled eggs, this dish can easily be served as a main meal for two. Serve the salad immediately after serving in order to keep the ingredients as fresh as possible.

Ingredients

  • 1 lb (455 g) of baby spinach leaves
  • 8 oz (225 g) of streaky bacon
  • 8 spring onions, thinly sliced
  • 6 radishes, thinly sliced
  • 2 hard-boiled eggs, finely chopped
  • 4 tbsp of red wine vinegar
  • 4 tbsp of water
  • 1 ½ tbsp of olive oil
  • 4 tsp of caster sugar
  • 1 tsp of mustard powder
  • Salt and pepper

  1. Discard any coarse stalks from the spinach and rinse under running water. Place the spinach into a large serving dish.
  2. Grill the bacon until crispy and browned. Remove from the grill and soak up any excess fat by draining on kitchen paper.
  3. Allow the bacon to cool slightly then chop into small pieces and leave to one side.
  4. Heat the oil in a small pan.
  5. In a small bowl, combine the vinegar, water, sugar, mustard, salt and pepper until smooth.
  6. Add this dressing mixture to the frying pan with the olive oil and bring to the boil, stirring continuously.
  7. Pour the dressing over the spinach leaves.
  8. Sprinkle the bacon bits, radishes, spring onions and egg over the spinach .
  9. Toss all of the ingredients together.
  10. Serve immediately.
