This salad is quick to prepare and can be eaten as a starter or main meal for lunch. You can take it to work to eat as a healthy option rather than fast food. It is packed full of flavour from ingredients such as capers, gherkins, mustard, parsley and Gruyère cheese.

Swiss cheese and cherry tomato salad recipe

Ingredients

  • 8 oz (250g) of basmati rice
  • 5 oz (150g) of Gruyère cheese
  • 4 oz (125g) of cherry tomatoes
  • 1 stick of celery, sliced
  • 2 gherkins, sliced
  • 2 tbsp of capers
  • For the dressing

  • 4 tbsp of mayonnaise
  • 2 tbsp of olive oil
  • 2 tbsp of white wine vinegar
  • 1 tbsp of mustard
  • 3 tbsp of chopped fresh herbs (parsley, tarragon, thyme)
  • Salt and pepper

Method

  1. Cook the rice in a pan of boiling water for approximately 12-15 minutes. Drain and rinse under cold running water. Transfer to a large bowl.
  2. Mix together all of the dressing ingredients in a separate bowl and then add to the rice. Stir well.
  3. Add the cheese, tomatoes, celery, gherkins and capers and mix well so that all the ingredients are coated with the dressing.
  4. Transfer to separate plates and serve.
