Cottage cheese, avocado and peach salad recipe

Ingredients

  • ½ a lettuce
  • 1 avocado
  • 1 ripe peach (or pear)
  • 115g (4oz) of alfalfa sprouts
  • 4 tbsp of cottage cheese
  • For the dressing

  • 250ml (8 fl oz) of sunflower oil
  • 2 tbsp of olive oil
  • 2 tbsp of freshly squeezed lemon juice
  • 2 tbsp of cider vinegar
  • 1 tsp of caster sugar
  • ½ tsp of salt

  1. In a food processor or tall container mix together the lemon juice, vinegar, sugar and salt until the sugar and salt have dissolved.
  2. Add the olive oil and mix well.
  3. Slowly pour in the sunflower oil and blend thoroughly until all the ingredients have mixed together. Set aside until required.
  4. Shred the lettuce and arrange on plates.
  5. Halve the avocado, remove the stone and cut into slices. Arrange on top of the lettuce.
  6. Wash, peel and core the peach. Cut into thin slices and place on top of the lettuce and avocado.
  7. Spoon the cottage cheese into the middle of each plate.
  8. Sprinkle the alfalfa sprouts over the top of the salad.
  9. Drizzle the salad dressing over the top.
  10. Chill for 10 minutes before serving.
