This is a simple green salad served with a dressing of Stilton cheese and mayonnaise. As with many of the salads that contain cheese, watch out for the calories and saturated fats that are contained in the majority of cheeses, especially if you are dieting. Often, a full-fat cheese can be substituted for a lower-fat version. This salad is bouncing with flavour and the walnuts add an exciting texture to the salad.

Ingredients

  • 1 bag of watercress small handful of lettuce leaves
  • 2 oz (55 g) of walnuts
  • For the dressing

  • 150 ml (¾ pint) of mayonnaise
  • 2 oz (55 g) of Stilton cheese, grated
  • 2 tbsp of wine vinegar
  • 1 tbsp of olive oil
  • 1 tsp of sugar
  • Salt and pepper

  1. Wash and dry the lettuce and the watercress.
  2. Arrange the lettuce leaves around the bottom and sides of a salad bowl.
  3. Place the watercress in the middle of the bowl.
  4. Scatter the walnuts over the top.
  5. Blend together the mayonnaise, vinegar and oil until smooth.
  6. Stir in the sugar and the cheese. Check the seasoning and adjust if necessary.
  7. Drizzle the dressing over the salad just before serving.
