If you like your chicken a little hot and spicy, try this recipe for homemade cajun chicken, roasted in the oven, sliced and laid over a fresh bed of salad leaves and potatoes. Note that this dish does not contain mayonnaise and is therefore an extra healthy choice and be aware that this chicken dish contains chilli and paprika!!!

Ingredients

  • 2 skinless chicken breasts
  • 7 oz (200 g) of new potatoes
  • 2 oz (50 g) of mixed salad leaves
  • 3 finely chopped spring onions
  • 1 crushed clove of garlic
  • 1 tbsp of paprika
  • 1 tbsp of vegetable oil
  • 1 tsp of dried oregano
  • ½ tsp of chilli powder
  • ½ tsp of allspice
  • salt and pepper
  • For the dressing

  • 2 tbsp of olive oil
  • 1 tbsp of cider vinegar
  • ½ tsp of sugar
  • pinch of paprika
  • Salt and pepper

Method

  1. Preheat the oven to 375 °F (190 °C).
  2. Mix together the paprika, vegetable oil, oregano, chilli powder, allspice and crushed garlic in a small mixing bowl and then rub all over the chicken pieces.
  3. Place the chicken breasts onto a baking tray and roast for 20 minutes or until fully cooked.
  4. Remove from the oven and allow to cool.
  5. Wash the potatoes to remove any dirt and cook in a pan full of lightly salted boiling water or in a steamer until cooked through.
  6. Remove from the heat, drain and allow to cool, then cut into thick slices.
  7. Arrange the salad leaves onto a serving dish or onto individual plates and add the potato slices.
  8. Sprinkle with the finely chopped spring onions.
  9. Place the dressing ingredients into a jar with a screw-top lid and shake well. Pour over the salad leaves and potatoes.
  10. Take the chicken breasts and cut into slices. Arrange on the top of the salad.
  11. Serve immediately.
