Italian-style tortelloni salad

This salad is a hearty and nutritious meal in itself and should be served as a main meal rather than as a starter. You can use any type of tortelloni, but we recommend spinach and ricotta flavoured. The salad also contains other classic Italian ingredients such as pine nuts, basil, Parmesan cheese and sun-dried tomatoes. Although there are numerous ingredients, the salad is extremely easy to prepare.

Italian-style tortelloni salad recipe

Ingredients

  • 1 x packet of spinach and ricotta tortelloni
  • 4oz (125g) of cherry tomatoes, halved
  • 4 sliced spring onions
  • 4 sun-dried tomatoes in oil, sliced
  • 4 artichoke hearts in oil, drained and chopped
  • 6 tbsp of olive oil
  • 2 tbsp of balsamic vinegar
  • 1 tbsp of roasted red pepper in oil, sliced
  • 2 tbsp of pine nuts
  • 2 tbsp of freshly torn basil leaves
  • Parmesan shavings
  • Salt and pepper

  1. Cook the tortelloni in salted boiling water with a drop of olive oil according to packet instructions. Drain well and rinse under cold water. Transfer to a large bowl.
  2. Add the oil and vinegar and toss the pasta to mix well.
  3. Carefully add all of the remaining ingredients except the pine nuts and Parmesan. Season with salt and pepper and stir well.
  4. Transfer the pasta into separate serving bowls and sprinkle with the pine nuts.
  5. Garnish with the Parmesan shavings and serve.
