This salad is refreshing, sweet, herby, filling and very nutritious. Cooked pasta is dressed in olive oil and vinegar and allowed to cool. Sliced pieces of cooked chicken are added along with halved balck grapes and thin strips of raw celery and carrot. Finally, the salad is tossed in a mixture of pesto, mayonnaise and soured cream. All the ingredients compliment each other, resulting in delicious meal.

Pasta chicken salad recipe

Ingredients

  • 6 oz (180 g) of cooked chicken meat
  • 4 ½ oz (125 g) of seedless black grapes
  • 4 ½ oz (125 g) of pasta twirls or bows
  • 2 slicks of celery
  • 1 large carrot
  • 2 tbsp of mayonnaise
  • 1 tbsp of soured cream or fromage frais
  • 1 tbsp of olive oil
  • 2 tsp of pesto sauce
  • Salt and pepper
  • For the dressing

  • 3 tbsp of olive oil
  • 1 tbsp of wine vinegar
  • Salt and pepper

  1. Boil the pasta in a large saucepan full of boiling water with the tbsp of olive oil. Cook until al dente.
  2. In the meantime, blend together the ingredients for the dressing.
  3. When the pasta is cooked, drain the water and transfer the pasta to a mixing bowl.
  4. Stir in 1 tbsp of the dressing and set aside to cool down.
  5. Slice the celery into thin pieces and cut the carrot into matchsticks. Add both ingredients to the pasta.
  6. Cut the grapes into half and add to the bowl.
  7. Cut the chicken into thin strips or pieces and add to the pasta. Stir well.
  8. In a small bowl, blend together the mayonnaise, pesto sauce and the soured cream.
  9. Add the mayonnaise and pesto mixture to the pasta and chicken and toss the pasta into the sauce.
  10. Transfer to serving plates and serve.
