Tuna and tomato pasta salad

This salad is simple and quick to prepare, and therefore ideal if you are in a rush or only have a few basic ingredients in your refrigerator. Your choice of pasta shapes is combined with tuna, cherry tomatoes, spring onions and carrot and mixed with a simple dressing of olive oil, garlic and basil.

Tuna and tomato pasta salad recipe

Ingredients

  • 6oz (185g) of tinned tuna
  • 4oz (125g) of pasta shapes of your choice
  • 4 spring onions, sliced
  • 1 carrot, peeled
  • For the dressing

  • 8oz (250g) of cherry tomatoes, halved
  • 3 tbsp of torn fresh basil leaves
  • 1 tbsp of olive oil
  • 1 crushed clove of garlic
  • Salt and pepper

  1. First of all prepare the dressing by placing half of the tomatoes into a food processor.
  2. Add the olive oil, garlic and basil leaves and process until a purée is formed. Set aside until required.
  3. Cook the pasta in boiling water with a drop of olive oil according to packet instructions and then drain, rinse under cold water and transfer to a large bowl.
  4. Using a vegetable peeler, cut ribbons from the carrot and add to the pasta.
  5. Add the dressing to the pasta and stir well before adding the remaining ingredients.
  6. Season with salt and pepper and serve.
