This salad is more commonly referred to as tomato, mozzarella and basil salad. Large, juicy and flavoursome tomatoes ripened on the vine as ideal for this recipe, as is fresh Mozzarella and fresh basil. The capers are optional and you may wish to leave them out of the salad. The salad is quick and easy to prepare and is a very popular starter during the summer months.

Caprese salad recipe

Ingredients

  • ½ lb of Mozzarella cheese
  • 2 large vine-ripened tomatoes
  • 2 tbsp of capers (optional)
  • olive oil
  • fresh basil leaves
  • rock salt
  • pepper

Method

  1. Cut the Mozzarella and tomatoes into equal amounts of slices and arrange alternately on a serving dish or individual plates.
  2. Tear the basil into pieces with your fingers and sprinkle over the cheese and tomatoes.
  3. Season with salt and pepper.
  4. Just before serving drizzle some olive oil over the dish.
  5. Serve with fresh crusty bread.
