Ingredients

  • 1 lb (455 g) of ripe tomatoes
  • 8 oz (225 g) of feta cheese
  • 3 oz (85 g) of black olives
  • 1 cucumber
  • 1 red onion
  • For the dressing

  • 6 tbsp of extra-virgin olive oil
  • 2 tbsp of lemon juice
  • 2 tbsp of freshly chopped oregano
  • 1 crushed clove of garlic
  • Pinch of sugar
  • Salt and pepper

  1. Cut the tomatoes into small chunks and place into a salad bowl.
  2. Wash the cucumber, cut in half and then cut into thick slices. Add to the tomatoes.
  3. Remove the ends of the onion, halve and then slice thinly. Add to the salad.
  4. Add the olives and mix the ingredients together.
  5. Place all of the dressing ingredients into a jar with a screw-top lid and shake vigorously to combine well.
  6. Pour the dressing over the salad and toss gently to mix the ingredients.
  7. Cut the feta cheese into small cubes or chunks and scatter over the top of the salad.
  8. Serve immediately.
