Chickpea salad recipe

Ingredients

  • 1 jar of chickpeas
  • ½ a red pepper
  • ½ a green pepper
  • ½ a red onion
  • handful of cherry tomatoes
  • For the dressing

  • 6 tbsp of olive oil
  • 3 tbsp of cider vinegar
  • 2 tbsp of freshly chopped parsley
  • Salt and pepper

  1. Empty the chickpeas into a sieve and rinse under cold running water. Place into a mixing bowl.
  2. Core and dice the peppers. Add to the chickpeas.
  3. Finely chop the red onion and add to the bowl.
  4. Halve the cherry tomatoes and add to the other ingredients along with the finely chopped parsley.
  5. Place all of the dressing ingredients into a jar with a screw-top lid and shake well.
  6. Pour over the salad and mix all of the ingredients together with a spoon.
  7. Chill in the refrigerator until needed.
  8. Check the seasoning and serve.
