Prepare this salad if you are feeling sluggish or tired or just need some food that nourishes as well as energises you. Green lentils are cooked and seasoned with delicious flavours such as garlic, ginger and coriander.

Green lentil and ginger salad recipe

Ingredients

  • 8oz (225g) of green lentils
  • 1 pint (600ml) of water
  • 1 grated carrot
  • 1 finely chopped onion
  • 2 crushed cloves of garlic
  • 2 tbsp of freshly squeezed lime juice
  • 1 tbsp of olive oil
  • 1 tbsp of crushed coriander seeds
  • 2.5cm (1-inch) piece of ginger, chopped
  • Black pepper
  • Freshly chopped coriander to garnish

  1. Cook the lentils in simmering water until they are firm but done.
  2. Add the carrot and simmer for a further 5 minutes.
  3. Drain the lentils, transfer to a large bowl and set aside to cool.
  4. In the same pan, heat the olive oil and fry the onion, garlic and coriander seeds.
  5. Add the onion mixture to the lentils and stir well.
  6. Mix in the remaining ingredients and season.
  7. Serve warm or leave to cool and then serve. Garnish with the freshly chopped coriander.
