Red kidney bean salad recipe

Ingredients

  • 1 can of red kidney beans
  • 2 sticks of celery, sliced
  • ½ small red onion, finely chopped
  • ¾ cup of cider vinegar
  • 3 tbsp of extra virgin olive oil
  • ½ tsp of dried oregano
  • Salt and pepper

Method

  1. Empty the kidney beans into a sieve or colander and rinse under cold water. Place into a bowl.
  2. Mix together the oil, vinegar, oregano, salt and pepper and pour over the beans. Stir well.
  3. Add the chopped onion and the celery and stir all of the ingredients together.
  4. Chill in the refrigerator until required.
