Tuna fish and butter bean salad recipe

Ingredients

  • 1 jar of butter beans
  • 2 tomatoes
  • 2 spring onions, finely chopped
  • 7 oz (200 g) of tuna, drained
  • 1 crushed clove of garlic
  • 2 tbsp of freshly chopped parsley
  • 2 tbsp of olive oil
  • 1 tbsp of freshly squeezed lemon juice
  • 2 tsp of clear honey

  1. Drain the beans and rinse well under running water. Place into a mixing bowl.
  2. Add the chopped onions.
  3. Halve the tomatoes and then cut into thin slices. Add to the beans.
  4. Add the tuna and stir all of the ingredients together.
  5. Add the chopped parsley.
  6. Place the remaining ingredients into a screw-top jar and shake thoroughly until the mixture thickens. Pour over the salad and toss all of the ingredients together.
  7. Chill in the refrigerator for at least 30 minutes before serving.
