Chicory and grapefruit salad recipe

Ingredients

  • 2 heads of chicory
  • 1 packet of lamb's lettuce
  • 1 pink grapefruit
  • 1 avocado
  • 1 tbsp of freshly chopped mint
  • For the dressing

  • 3 tbsp of olive oil
  • 1 tbsp of wine vinegar
  • 1 crushed clove of garlic
  • 1 tsp of honey
  • ½ tsp of Dijon mustard
  • Salt and pepper

  1. Place the lamb's lettuce on a serving dish or on individual plates.
  2. Peel the grapefruit and remove the pith. Divide into segments, whilst holding over a bowl to catch the juices. Add to the lamb's lettuce.
  3. Slice the chicory thinly and add to the salad.
  4. Cut the avocado in half and remove the stone. Peel away the skin and cut the flesh into small chunks.
  5. Add to the salad and sprinkle with the chopped mint.
  6. Toss the salad ingredients together.
  7. Put all of the dressing ingredients into a jar with a screw-top lid and shake vigorously.
  8. Drizzle as much dressing as is required over the salad and toss well.
  9. Serve immediately.
