This is a very light and refreshing salad. It can be served as an accompaniment to a light meal of hot or cold meat. Fennel is an acquired taste, but it goes ever so well with orange.

Fennel and cucumber salad recipe

Ingredients

  • 1 fennel bulb
  • ½ a cucumber
  • 2 oranges
  • 4 radishes
  • 1 crushed clove of garlic
  • 3 tbsp of olive oil
  • 2 tbsp of freshly chopped mint
  • 1 tbsp of lemon juice
  • Salt and pepper

  1. Peel the oranges and remove as much pith as possible. Hold the oranges over a salad bowl and divide into segments. Place into the bowl.
  2. Slice the fennel and radishes and dice the cucumber. Place into the salad bowl with the oranges.
  3. Blend together the olive oil, garlic, lemon juice, salt and pepper and pour over the salad.
  4. Toss all of the ingredients into the dressing.
  5. Sprinkle with the chopped mint and stir.
  6. Serve at once or keep chilled until required.
