Ingredients

  • 1 handful of baby spinach leaves
  • 1 handful of endive leaves
  • 1 handful of radicchio
  • 1 handful of bean sprouts
  • 4 spring onions, finely chopped
  • 1 small courgette, sliced
  • 1 carrot, grated
  • ½ red pepper, sliced
  • ½ orange or yellow pepper, sliced
  • 1 tbsp of sunflower or pumpkin seeds
  • For the dressing

  • 1 tbsp of olive oil
  • 1 tbsp of lemon juice
  • 1 tsp of mustard
  • 1 tsp of honey
  • 1 tsp of freshly chopped parsley

Method

  1. Wash and dry the salad leaves and place into a salad bowl.
  2. Add the chopped onions, grated carrot, sliced peppers and courgettes and the bean sprouts.
  3. Combine the dressing ingredients in a mixing bowl by stirring with a spoon or fork until smooth.
  4. Pour the dressing over the salad and toss all the ingredients together.
